Topper’s Brown Bread

Ingredients:

 3 sticks (12 oz) butter, melted

 2/3 cup packed brown sugar

 1 ½ cups molasses

 2 eggs

 1 cup wheat flour

 1 cup rye flour

 1 cup fine grind cornmeal

 2 tsp baking soda

1 tsp salt

1 cup sour cream

1 cup dried black currents

Directions:

1.    Mix the butter, brown sugar and molasses together in a mixer with a paddle attachment.

2.    Add in the eggs one at a time, beating well between each addition.

3.    Mix the dry ingredients in a separate bowl.

4.    Alternate adding in the dry ingredients and the sour cream t the eggs/sugar mixture.

5.    Fold in the currants.

6.    Place 3 x 4 metal round molds (can use a small loaf pan instead) on a baking sheet lined with parchment and fill them about ¾ of the way up.

7.    Bake at 325 for 20-25 minutes.
